Coal Pot and Bowl

Display: Global Gastronomy
Culinary Technique: fuel conservation

Location: St. Lucia, Caribbean Islands

African immigrants brought the hand-thrown coal pot to the Caribbean. Used for outdoor cooking in rural areas, it was suited to preparing one-pot meals. A charcoal fire heated the clay bowl set in the pedestal form, which collected ash debris in the protruding lip at its base.
