Meat Tenderizer

Display: Cutting Edge
Culinary Technique: tenderizing

Watch collection donor Mel Mickevic demonstrate this object with
Dean Christopher Koetke, School of Culinary Arts, Kendall College,
and Victoria Matranga, exhibition curator.

Tenderizing softens muscle fibers to make chewing easier and to make the meat more pliable for handling. Many types of tools tenderize meat with a physical action. Meats can also be tenderized chemically by marinating and aging processes, and selective breeding also results in more tender meats.
