Heat is a form of energy that moves from one material or object to another as nature seeks to equalize temperatures. The speed at which this energy moves is based upon the molecular characteristics of the objects. Some materials are excellent conductors of heat (metals, liquids) and others are insulators (glass, wood). Managing the transfer of heat is critical to proper cooking.
