Fermentation is the chemical process that converts carbohydrates to alcohols and carbon dioxide or organic acids using yeasts or bacteria, as in the production of alcoholic beverages such as wine, beer, and cider. Fermentation contributes to the leavening of bread, preserves vegetables like cabbage as sauerkraut and kimchi, and causes milk to sour and become yogurt.
